This is a recipe I have made since the 1980's!
Some of you may be too young to remember this,
but long ago, our electric and gas bills included recipes!
I can remember this tradition all the way back to
Mississippi, Alabama and yes, Texas!
This is a winning recipe that I had saved
from a Texas electric bill shortly after we moved here.
Everyone in the family adores this cake.
I had not made it for some time. so I decided today
was THE day!
Bohemian
Coffee Cake
1 cup brown sugar
1
cup white sugar
2
1/2 cups all- purpose flour
1 cup buttermilk
1 cup vegetable oil
2
eggs
1 tsp salt
1 tsp baking soda
1
tsp cinnamon
1
tsp nutmeg
1
tsp vanilla extract
1 cup shredded coconut
1 cup chopped pecans
Preheat oven to 350 degrees.
Add the baking soda to the buttermilk and mix together and set aside. Cream together the sugars, eggs, and oil.
Mix together until well combined.
Add dry ingredients together (flour, salt, cinnamon, and nutmeg) and slowly add to the wet ingredients and mix well. Add in the vanilla and buttermilk mixture. Stir in the coconut and pecans.
Spray a Bundt pan with nonstick spray and add in the cake batter. Bake for around 50 to 60 minutes. Allow to cool and then carefully remove from the Bundt pan.
Powdered Sugar Icing
1 cup powdered sugar
2 T. milk (maybe a tad more)
1/4 t. vanilla extract
Mix together until smooth Pour over the cooled cake.
