PUMPKIN COBBLER



I thought it would be great to share this fabulous pumpkin cobbler
recipe to celebrate the season.
I feel it's important to feel like each day should be a celebration
because life can change on a dime and not so good days
are always right around the corner.
So don't worry too, too much about counting calories....


I always made this for coworkers for a little treat
and they would request more....


Be sure to serve this with whipped cream
or a scoop of vanilla ice cream!


PUMPKIN COBBLER
Cooking spray
1/2 cup white sugar
2 eggs, beaten
1 (15 ounce) can pure pumpkin
3/4 cup evaporated milk
1 teaspoon orange extract
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
1 box yellow or white cake mix (1/2 of the package)
1/2 cup butter, melted
Pecans, if desired



Preheat oven to 350 degrees F. Spray an 8-inch square baking dish with cooking spray.

Whisk sugar and eggs together in a bowl until light; stir pumpkin, evaporated milk, orange extract, cinnamon, ginger, cloves, and salt into egg mixture. Pour pumpkin mixture into the prepared baking dish. 

Lightly sprinkle cake mix over the top, covering pumpkin mixture completely. sprinkle pecans over this. Slowly drizzle melted butter over the cake mix.

Bake in the preheated oven until the pumpkin mixture is set and topping is golden brown, 50 minutes to 1 hour.

  1. That sounds delicious. Just want to make sure I "get this". None of the cake mix is stirred into the pumpkin mixture....it is just sprinkled on top....is that right? I am going to make this for a pumpkin loving friend. xo Diana

    1. Hi Diana...the cake mix is sprinkled on top of the pumpkin filling..it forms a buttery cobbler crust while baking..hope you enjoy it!

    This looks so pretty in your baking dish! Is that Polish pottery? I've never met a cobbler I didn't like, and this will be no exception, I'm sure. ;D It looks and sounds yummy! What a perfect way to enjoy the fall months -- I'll definitely be trying this recipe. Going to pin it now.

  7. Betsy, I can almost smell that through the computer!! I will definitely try that. I make something called "Dump Cake" (lovely name) that has cake mix sprinkled on top, but different from the rest of your recipe. -Jenn
