My beautiful friend in Pennsylvania sent me
this photo of their deck a few days ago.
Oh.....I remember this all too well..
months of frozen snow.....there were days we
felt snowed in and could not venture out the back door,
nor the front porch door.
It's even jacket weather
today in Texas.........
You may as well enjoy your beautiful winter wonderland
and
sit down to dinner with a bowl of hot homemade soup!
This one will warm you to your bones!
Baked Potato Soup
8 slices bacon
1/2 cup flour
2 cups half and half
Cheddar Cheese
Sour Cream
In a Dutch oven, cook bacon until crisp.
Remove and crumble while reserving
drippings.
Sauté onion in bacon drippings until tender
Add salt and pepper
Stir in flour and cook for one minute,
stirring constantly
Slowly add chicken broth; cook, stirring
constantly until thick and bubbly Add potatoes, parsley and half & half;
cook for 10 minutes
Stir in cheese and sour cream.
Garnish with cheese, bacon, green onions
and sour cream.
Gosh that looks good! Icy today so no going to the store for supplies. Will pin and add to my soup and stew file. Thanks for the recipe.
