Who doesn't love attending a beautiful
Easter morning brunch.
Perhaps it is planned to enjoy after the Easter sunrise service,
or before the 11;00 AM formal church service...
either way, everyone so enjoys savoring
spring recipes that are homemade and a bit special
for this most blessed occasion.
This Lemon Bread is a favorite from
a local Pensacola catering cafe'!
This is definitely more the texture of bread, than cake
with a beautiful citrusy lemon flavor and glaze!
LEMON BREAD
1 1/2 cups flour
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
3 eggs, at room temperature
1 cup sugar
2 T. butter, room temperature
1 t. vanilla
2 t. lemon extract
1/3 cup lemon juice
1/2 cup oil
zest of one fresh lemon
LEMON GLAZE
1 cup powdered sugar
2 T. milk
1 t. lemon juice
Preheat the oven to 350 degrees F.
Spray a loaf pan with cooking spray.
In a mixing bowl, combine flour, baking soda,
baking powder and salt. Set aside.
In a medium size mixing bowl,
combine eggs, sugar, butter, extracts and lemon juice.
Blend with mixer until well combined.
Slowly add the dry ingredients into the wet ingredients.
Add the oil and lemon zest
and
blend well.
Pour into loaf pan and bake for 40-5o minutes.
Cool before inverting on serving platter.
Pour lemon glaze of the bread.
Slice when ready to serve.

ReplyDeleteYes, YES, YESSSSS!!!!!! I will be making this in small loves to give my children and guests as they leave on Good Friday. Louis Dean and I host a Good Friday Dinner every year thereby freeing up Easter Sunday for church services. I traditionally make Easter Bread and am planning on doing that this year as well. It's a yeast bread with a slight lemon flavor formed into a circle with a colored egg in the center - thus making a nest. The egg bakes along with the bread and makes a perfect meal for Easter Sunday breakfast.
