BUTTERMILK CUPCAKES...A MARTHA VILLAS SPECIALTY

 SPECIALTY....
A skill to which someone has devoted
much time and effort and
in which they were an expert.
This would describe Martha Pearl Villas!

Widely known for her Southern cooking, Mrs. Villas co-authored 3 cookbooks
with her son, James, demonstrated her culinary expertise on
 'Good Morning America,' the Food Network, and
 many other national TV programs, and
was even invited to teach a course
 at the Cipriani Cooking School in Venice, Italy

MY MOTHER'S SOUTHERN DESSERTS
 is a cookbook to linger over....Miss Martha and her son, James
share stories of life experiences they treasured and speak of all
the southern traditions they held dear.
James Villas was the food and wine editor at
Town and Country Magazine for years
and was the author of eight cookbooks!

Today, I bring you one of her best recipes that
will make you a star baker!

James Villas wrote....
"Although Mother created these tangy cupcakes
as a base for her Bridal Shower Snowballs,
they are also delicious cloaked with virtually
any frosting to be served at birthday parties,
parties, afternoon tea or special occasions!"



BUTTERMILK CUPCAKES
1/2 cup butter, softened
1 cup sugar
2 large eggs
2 cups all-purpose flour
1/2 t. salt
1 t. baking soda
2/3 cup buttermilk

Preheat oven to 350 degrees F.
In a medium mixing bowl, cream the butter and sugar.
Mix until light and fluffy.
Add eggs, one at a time, beating well after each addition.

In a separate mixing bowl, combine the flour, salt and baking soda.
Mix well.
Add dry ingredients to creamed mixture alternately
with the buttermilk.
Fill prepared muffin tins 3/4 full and bake for 20 minutes.
Cool completely before frosting.

PREPARING FOR THE SPRING SEASON and GERMAN CHOCOLATE CUPCAKES


Hello Loves...
I'm so glad to see you today....
thank you for coming back to visit me!
Are you as ready for the Spring season as I am?
Here is a little inspiration to help us all celebrate this beautiful time of year.....


It was time to search the cupboards and see what
I could pull together for a little kitchen vignette!


It's rather enjoyable to see what pieces you can
put together and obtain a result that you are pleased with.....


Keep adding and subtracting until you achieve
the desired result....a pitcher, mugs, plates,
napkins, greenery, a basket and a bunny completed this little corner.....


And....voila.....I love it!


I am obsessed with a yogurt parfait for breakfast....
Go the extra mile and use a pretty floral plate, a sweet little glass and layer
vanilla yogurt, a frozen mixed berry blend and peanut butter granola
for a lovely breakfast ...what a beautiful way to greet the day!


I decided to only add a few spring touches to the entryway table....
I added my spring garland......


and this beautiful spring wooden art work.....


It's nothing over the top....but certainly provides
the feeling of the spring season.....


I so love planting seeds in flower pots every year.....
there is something so satisfying about growing flowers from seeds.....
I find these flowers very Victorian and somewhat romantic.....


My favorite mid-afternoon pick-me-up snack is
a refreshing Cutie!

My recipe for the week was homemade
German Chocolate Cupcakes....
it's been a long time since I have made these from scratch
and it is so worth the effort.....
just divine I tell you......

CHOCOLATE CHIP CREAM CHEESE CUPCAKES


I know you must be gathering over the top
recipes for your holiday gatherings!
This is one I discovered in one of my cookbooks
from the past and let me tell you....
these are DIVINE!


CHOCOLATE CHIP CREAM CHEESE CUPCAKES
1 (8 ounce package) of cream cheese
1/3 cup sugar
1 large egg
1/2 t. salt
3/4 cup semi-sweet chocolate chips
1 1/2 cup flour
1 cup sugar
1/4 cup cocoa
1 t. baking soda
1/2 t. salt
1 cup milk
1/3 cup oil
1 t. vanilla


Mix cream cheese, 1/3 cup sugar and salt with hand mixer.
Blend in chocolate chips and set aside.

Mix all remaining ingredients
in a medium sized mixing bowl.
Prepare muffin pan with cupcake liners.
Spoon cake batter into each liner
filling to one half full.
Drop a big spoonful of cream cheese mixture
in the center of each cupcake.
Bake at 350 degrees F. for 20 minutes.
Make sure center is completely set.
Cook slightly before serving.

BROWNIE CUPCAKES! PERFECT FOR FALL WEATHER!


There is one special request I receive each year
from the darling just about the time fall rolls around...
BROWNIE CUPCAKES!


It's so nice to come home......


Do you take an afternoon and put your feet up
for a little time for yourself just to browse
the new fall magazine issues and enjoy a hot cup of spiced tea?


Have your draped those fall throws and beautiful
autumn pillows around your family room?

Are there pumpkins in every nook and cranny?
How about the comforting scents of an autumn spice
candle burning in the kitchen....
I just savor every day of fall!
We are even expecting cooler weather and some
much need rain on Sunday....oh blessed autumn!

This is a YUM-O recipe.....
enjoy it..don't worry about the calories love....
It's Fall Y'all!!!!


BROWNIE CUPCAKES
1/2 cup butter
1/2 cup semi-sweet chocolate chips
2 eggs
3/4 cup sugar
1/2 cup flour
1/2 t. vanilla
1/4 cup chopped pecans


Melt the butter and chocolate chips over low heat in a small saucepan.
In a mixing bowl, beat together the eggs and sugar.
Pour the melted butter and chocolate chips into the egg/sugar mixture
and blend well.
Add the flour, vanilla and pecans.
Mix well.
Divide into lined cupcake liners.
Bake in preheated 325 degree F. oven for 15-20 minutes.
Frost with milk chocolate buttercream
and
top with autumn sprinkles!

PETER RABBIT TEA COLLECTION...EASTER TREASURES TO CHERISH

The misadventures of Peter.....
along with Tom Kitten, Mrs. Tiggy Winkle and Squirrel Nutkin!
The creation from Beatrix Potter's
tale of her mischievous bunny and friends
we all fell in love with as children.
These are among my favorite collectibles!!


True Confession....
I have had a long time love affair with Peter Rabbit.
Each year, I add a Beatrix Potter item
to my collection.
And this year.....
it is the 
Peter Rabbit Trio of English Tea's


These little tins are absolutely darling!
Tea for morning, noon and night.


Each side of each tin reflects one of Beatrix Potter's
beloved little characters.


The Flopsy Bunnies
contains an Earl Gray Tea.
This little tiny sheep
belonged to my mother.


The Peter Rabbit tin
features an English Breakfast Tea.


The Mrs. Tiggy-Winkle tin is an
English Afternoon Tea.


There are twenty tea bags per tin.


What a sweet little addition to the items
I purchased last year.
I found these little treasures at our
Third Monday Trade Days and Home Goods.


Spring is the universal time of rebirth and renewed faith.
No matter where you rest your hat on Sunday mornings,
it's also an Easter tradition to gather together as family
for a celebratory holiday meal.
Peter Rabbit cupcakes are always featured on the sweet endings sideboard.

It had always been our tradition to
spend Easter at home in Jackson.
The children would hunt Easter eggs in Mother and Daddy's backyard
and
then again up at the Darling's parents.
I long for those times....


What a wonderful addition to the Easter Basket!

GET READY FOR SPRING


 Hello Loves.....
how was your weekend?
What projects did you work on?
I could no longer wait...
with all this glorious spring weather
we have loved the past few days...
I simply had to bring out the bunnies!


I think he needs a cart full of jelly beans.


I am crazy about this little cupcake stand
from Pottery Barn!
Just waiting for the perfect little Peter Rabbit cupcake!


Miss Judy gave me this Valarie Par Hill spring bunny
twenty years ago and I bring him out every Easter!
You can use this as a door decoration or 
anywhere you choose to display him!
This year, he's taking his spot in the kitchen!

Cadbury Creme Eggs are a must- have!

Feeling the love for Easter and all-things Spring


Easter is just the sweetest time of year.


Bo came to visit for the weekend

as always...had new Bark Box toys to play with!

weekend for Mae, when Bo pays us a visit....
