I simply adore fresh cranberries!
And, they just should be included in your
Christmas festivities!
This is my Mother's cranberry salad recipe
which will be served with our Christmas dinner!

WHIPPED CREAM CRANBERRY SALAD
1 lb. fresh cranberries
2 cups sugar
2 cups of whipped heavy cream
1 20 ounce can pineapple tidbits, drained
1 cup chopped pecans
1 10 ounce bag mini marshmallows
Chop cranberries in a food processor until they are finely chopped.
Toss with the sugar, until well coated.
Cover and refrigerate overnight!
The next morning, whip the cream until stiff peaks form.
Fold the cranberries into the whipped cream,
add pineapple tidbits, pecans and mini marshmallows!
Serve chilled in a beautiful serving bowl!

ReplyDeleteHi Dee...thank you for your question. The sugar seeps into the tart cranberries which is why you refrigerate this for 24 hours. It's a delightful side for a holiday dinner...the lightness of the whipped cream paired with the fresh sweetened cranberries and pineapple..not overly sweet..you can adjust the sugar to your liking!
