It's tradition!
Every October, I bake Mother's infamous
Apple Nut Cake!
She was voted "Cook of the Month"
in Jackson and this was one of her prize- winning recipes!
I fondly remember coming home from school
and smelling this freshly baked apple cake
during the fall months....especially October!
I have baked this cake ever since I was married
each and every fall....without fail.
In fact...just as the Divine Miss M
and I were talking yesterday morning,
I mentioned I was just putting Mother's cake in the oven
and
she replied...."Oh, I LOVE that cake!"
HELEN'S APPLE NUT CAKE
1 cup Wesson oil
2 eggs
2 cups sugar
2 1/2 cups flour
1 t. salt
1 t. baking soda
1/2 t. baking powder
1 t. cinnamon
3 cups chopped apples
1 cup chopped pecans or walnuts
Preheat oven to 350 degrees F.
Mix oil, sugar and eggs in a mixing bowl.
In a separate bowl, sift together flour and all
remaining dry ingredients.
Add the eggs and oil, Blend together.
Fold in apples and nuts.
Spread into a prepared 9" x 13" baking dish.
Bake for 45 minutes.
My mouth is watering! I love apple everything. For me, fall=apples. Thanks for recipe.

ReplyDeleteMy mother's 'famous' apple recipe was a cobbler. She made it in a roasting pan with the bottom full of apples and spices and the top was like a biscuit-that was like a shortcake biscuit almost. We ate it in a bowl with cream and sugar. I never figured out how she made it before she got ill. I have tried many, many times over the years to duplicate the recipe but have never even come close. Kind of sad to think the recipe is lost for good. xo Diana
Hi Diana! I know that is so sad for you not have your mother's recipe. This is the very reason I blog, so that my children can always refer to our favorite family recipes! How is the house selling going? I am still so in love with your home! Hope you are enjoying some gorgeous fall weather! Hugs!!!

DeleteIt seems your mother cooked and baked like my MIL. Always made from scratch. I can remember eating things my mother in law baked that I had only read about growing up. my own mother was not a cook. It made me smile when your daughter said , "oh I love that cake."
