CILANTRO- LIME BURRITO BOWLS



Have y'all been to the grocery store lately? Don't you just love it when the fall mums and pumpkins arrive? Even though it's not quite autumn weather here in Texas, it doesn't stop us from bringing out the jackets and lighting the chimineas! 

Anyhoo.....this is a great Friday night dinner! I fashioned the ingredients after the burrito bowls from Chipotle. So easy-breezy to make your own! Now, don't forget to add that fresh lime juice..it tastes so light and zesty! Another reason I just loved this, was that it was all veggie....no meat which is my preference nowadays! Just trying to get the darling on board with this! He loves rice, so I think this enticed him to be somewhat enthusiastic in trying this! Winner all around! 



An easy dinner idea for two!

CILANTRO-LIME BURRITO BOWLS
1/2 cup uncooked rice
1 cup salsa 
3 cups chopped Romaine lettuce
1 can whole kernel corn, heated and drained
1 black beans, heated,  drained and rinsed
2 Roma tomatoes, diced
1 avocado, halved, seeded, peeled and diced
2 tablespoons chopped fresh cilantro leaves
Sour Cream
1 fresh lime


In a large saucepan of 1 1/3 cups water, cook rice according to package instructions; let cool and stir in salsa; set aside.



The Assembly:  divide rice mixture into serving bowls; top with lettuce, corn, black beans, tomatoes, avocado and cilantro.

Serve immediately, and top with drizzles of fresh lime and sour cream!
