The holidays are soon upon us. With all of the festivities, come tempting foods that can be laden with calories. For some, planning a celebration can be challenging when we are watching what we eat. The older we become, I think the more aware we are of trying to stay active and maintain good eating habits. Now, this need not be boring. I came across a few great little charts that can be a good reference of foods that we should all be eating in various forms. So, I thought about researching some healthy recipes that will be easy to prepare, yet offering all the delicious flavor we long for!
LEMON
ARTICHOKE ANGEL HAIR PASTA
1/2 cup packed fresh basil
1/4 cup water
2 tablespoons freshly grated Parmesan cheese
1 1/2 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil
1 teaspoon grated fresh lemon rind
1/8 teaspoon salt
1/8 teaspoon pepper, freshly ground
Angel Hair Pasta
Toss with angel hair pasta until heated through.
I had this once at a restaurant--so delicious. Thank you for the recipe and the nutritional value of foods we should be including in our diets. (I especially love the chocolate:-D) XOXO
