On the Petite Side of Things!
I simply adore petite "things!" Tiny little pretties that seem so sweet...like this adorable petite pitcher I found this weekend at a bargain price! The colors on this pottery are simply beautiful! You know, one of those items you discover and decide you just cannot live without....totally adorable! Which brought to my mind the idea of baking petite pies....one to eat and one to share!
Need a sweet treat to share with your loved ones? How about mini-apple pies that are the perfect size for a family for two! I often bake little mini-pies, about 6-inches in diameter, that are so darling to share with the boys! This apple pie recipe is so delicious and easy to prepare. Now all they need do is add a big scoop of vanilla ice cream!
PETITE HONEY CRISP APPLE PIE
2 ready-made pie crusts
5 1/2 cups peeled cored
sliced cooking apples -Estelle's used Honey Crisp Apples
1 T. lemon juice
1/2 cup granulated sugar
1/4 cup brown sugar, packed
3 T. lour
1/2 t. ground cinnamon
1/4 t. nutmeg
THE TOPPING
3/4 cup flour
1/4 cup white sugar
1/4 cup brown sugar
1/3 cup butter, at room temp
Preheat oven to
375°F.
Fit pie crusts into two mini pie
plates.
In a large bowl, mix sliced
apples, lemon juice, both sugars,flour, cinnamon and nutmeg.
Mound gently into pie crusts.
Prepare Topping
In a medium bowl, with a
pastry blender or a fork, mix flour, both sugars, and butter until coarsely
crumbled.
Sprinkle evenly over
the apples.
Bake at 375°F for 45-50
minutes.
