Need an idea for a delicious summer sandwich that the entire family will enjoy? When everyone is splish-splashing in the pool, this recipe is enough to make everyone take time for lunch and then catch a siesta before evening fun!
ESTELLE'S GRILLED PIMENTO CHEESE, BACON AND TOMATO SANDWICH
1 (3-ounce) package cream cheese, room temperature
1 cup grated sharp cheddar
1 cup grated Monterey Jack
1/2 cup mayonnaise
1/4 t. garlic powder
3 tablespoons pimentos, chopped finely
1 teaspoon grated onion
Cracked black pepper, to taste
2 t. Tabasco sauce
Cooked bacon slices, 2 per sandwich
Fresh tomato slices
Rye Bread
Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended. Estelle's always uses a good jewish rye bread for this sandwich. Prepare the sandwich by spreading a little butter on each side of the bread. Spread with the pimento cheese mixture, add two slices of bacon, two fresh tomato slices...then grill to your desired preferance. This is a terrific sandwich and goes beautifully when paired with tomato soup!
