This has been a favorite of the "men at Estelle's"
for years!
It's an old Southern Living recipe that I often
served for lunch on a weekend
or for a busy weeknight dinner after
soccer practice!
Rob had requested this
for at least one dinner when he came home for
the weekend!
"Your wish is my command!"
Chili-Cheeseburger Pie
1 lb. ground chuck
1/2 cup chopped onion
1/2 cup chopped red pepper
1/2 cup evaporated milk
1/2 cup Italian breadcrumbs
1/2 cup catsup
1 T. Worcestershire sauce
1 T. chili powder
1/2 t.salt
1 t. black pepper
1 t. Italian seasoning
1 unbaked pie shell
1 1/2 cups shredded sharp cheddar cheese
Preheat oven to 350 degrees F.
Brown chuck, onion and red peppers in a medium skillet
until meat is browned and cooked through. Drain fat.
Stir in evaporated milk, Worcestershire sauce, breadcrumbs, catsup and seasonings.
Heat about 3 minutes. Remove from heat.
Prepare your unbaked pie shell in a greased pie baking dish.
Spread chili mixture in pie shell.
Top with shredded cheese.
Bake at 350 degrees for 30-45 minutes.
Serve with a fresh green salad
and
ice cold watermelon!!
My husband and grand daughter could eat this.

Husband is making Stroganoff for tonight. They have regular noodles, and I have G/F. But probably won't bother with them. Just enjoy it, by itself. With salad. And Newman's Lemonade. :-)
