When the days become shorter and the air is a bit crisp and cool,
nothing can be more perfect than
homemade butterscotch pudding.
One bite of this buttery, rich pudding will
taste like Autumn gave a party......
OLD -FASHIONED BUTTERSCOTCH PUDDING
1/2
cup packed brown sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1 2/3 cups milk
1 egg yolk, lightly beaten
3 tablespoons butter
1 teaspoon vanilla extract
In a medium sized saucepan combine brown sugar, cornstarch, and salt. Stir in
milk. Cook over medium heat, uncovered, for 5 to 10 minutes or until thickened and
bubbly, stirring constantly.
Stir
about 1/2 cup of the hot mixture into the beaten egg yolk. Return all to the saucepan, stirring to mix well, for another 2 minutes.
Stir
in the butter and vanilla until butter is melted. Divide into pretty dessert cups. Cover surface with plastic
wrap. Estelle's serves the pudding warm!
Love the little one, up there, in the autumn woods!!!!
ReplyDeleteOh yum! One of my favorites, but I am not sure that I've ever enjoyed a from scratch recipe.
ReplyDeleteSweet photo of autumn woods and your grand romping through.
I can't wait to taste this pudding recipe! It's been a very long time since I have had butterscotch pudding from scratch - thank you!
