I love to make brunch for family and friends because all you really need is an egg dish, a platter of fresh fruit and a lovely basket of warm pastries! The best part is the entire menu can be prepared ahead of time which will allow you to spend more time with your family. This quiche is so creamy and flavorful, not to mention so colorful on dinner plates! I have served this not only for brunch, but for breakfast, lunch and dinner!
SPINACH AND FETA QUICHE
1/4 cup butter 1 t. minced garlic
1/4 yellow onion, chopped finely
12 ounces shredded sharp cheddar cheese, divided
1 cup milk or half and half
4 eggs, lightly beaten
Salt and pepper, to taste
1 (10 ounce) boxes frozen chopped spinach, thawed and patted dry
6 ounces feta cheese with dried basil and tomato, crumbled
1/2 cup fresh mushrooms, chopped
few strips of red pepper
1 frozen deep dish pie shell, thawed
In large skillet, saute onion, mushrooms and garlic in butter, until soft, for about five minutes. Remove from heat.
Stir in 6 oz. cheddar, the feta cheese, and
spinach. Mix together and place into the pie crust.
In medium bowl, whisk together the eggs, milk, salt, and
pepper. Pour over spinach mixture, poking holes to allow the egg mixture to
seep inches.
Bake 25-30 minutes. Sprinkle with remaining 6 oz. cheddar cheese and red pepper strips,
continue baking 15 minutes, or until knife inserted in center comes out clean.
