There are two foods that pair beautifully for
the holidays....oranges and cranberries!
I adore making an array of good desserts for our
holiday gatherings...showstoppers if you will.
I take my best of the best recipes that will put
smiles on sweet faces and yummy memories in their hearts......
this one is a family favorite!
The orange glaze provides that smooth orange sweetness over the cake,
the cranberries offer the tart flavor and the pecans give the perfect little crunch!
ORANGE JUICE CAKE WITH CRANBERRIES AND PECANS
1 (15 oz.) box white cake mix
1 (6 oz.) box orange jello mix
1 cup orange juice
¾ cup vegetable oil
4 large eggs
THE GLAZE
2 tablespoons orange juice
1 cup powdered sugar
1 orange, zested
Blend together and pour over warm cake.
Preheat
oven to 350°F. Grease a Bundt pan with cooking spray. Set aside.
Combine
cake mix, orange jello, orange juice, vegetable oil, and eggs in a large bowl
and mix until ingredients are well blended.
Pour
batter into prepared Bundt pan. Bake for 35-40 minutes or until cake tester
comes out clean.
Remove
cake from oven to rest in pan for 5 minutes. Remove cake from Bundt pan to cool
completely on a wire rack.
Mix
powdered sugar, orange juice and beat until smooth. Drizzle over cooled cake.
Sprinkle with cranberries and chopped pecans.
Betsy, Oh my goodness you sure make some awesome foods. I think your grandmother would be so proud. I found a new cake pan at the goodwill. So I am going to try some of your cake recipes. LOL. Blessings, xoxo, Susie
