What are your plans for the weekend?
We are sprucing up the yard for autumn...
trying to complete this MAJOR chore
before some much needed rain moves in!
The darling wanted to grill chicken for Saturday,
but with 50% chance of rain,
I am going to opt for OVEN-BARBECUED CHICKEN!
This recipe is divine...
an old, old Southern Living favorite of ours!
You know, Southerners can barbecue chicken outdoors
almost all year long, but if the weather keeps you indoors,
you should consider this variation of BBQ in the oven!

OVEN-BARBECUE CHICKEN
1/2 cup flour
1 t. paprika
1 t. salt
1 t. pepper
1 whole chicken, cut into pieces
1/4 cup melted butter
1/2 cup ketchup
1/2 medium onion, chopped
2 T. water
1 T. vinegar
1 T. Worcestershire sauce
1/2 t. salt
1/2 chili powder
1/2 t. pepper
Combine first four ingredients, stir well.
Dredge chicken in flour mixture.
Pour butter into a 11" x 9" baking dish.
Arrange chicken in the pan, skin side down.
Bake at 350 degrees F for 30 minutes.
Combine remaining ingredients, stir well.
Remove chicken from oven and turn each piece over.
Spoon remaining sauce over chicken
and
continue to bake 45 minutes longer.

ReplyDeleteSounds wonderful!! I have pinto beans cooking overnight in the crock pot and will make up some TWO batches of cornbread in the morning. Per my dear Louis Dean's request. He, in turn, will be cooking his famous roast beef with gravy and homemade dinner rolls. We are starving for REAL food after two weeks of being down and out with allergies and such and NOTHING tasting good! I will be saving your BBQ chicken for next week!! I had BBQ PEACHES today and they were fabulous!! A friend brought them to tea here this morning. I will be making these for the family soon!!!

That looks marvelous. (If this is a second comment, please toss.) I am a little wary of using the barbecue so the oven sounds good to me and who doesn't love barbecue chicken?!
