A MUFFIN SO RICH AND DREAMY YOU’LL THINK IT’S DESSERT

This recipe will make your house smell absolutely scrumptious! With
a perfectly sweet taste and a delightfully crunchy topping, these light muffins
are Blue Ribbon winners indeed!
If you only make one muffin in your life, this should be the
one!!!!
BEST EVER APPLE MUFFINS
THE CRUMB TOPPING
½ cup
brown sugar
6 T. flour
¼ cup
butter
1 t. cinnamon
Mix together in a small bowl and set aside.
THE MUFFIN BATTER
1 ½ cups
brown sugar
2/3 cup vegetable oil
1 large egg
1 cup water
2 t. apple cider vinegar
2 ½ cups
flour
1 t. baking soda
½ t.
salt
2 cups apples, peeled and diced
Preheat oven to 325 F. Butter and flour or line a 15
cup muffin tin with paper cups.
Beat the 1 1/2 cups brown sugar oil, egg, and vanilla in a large bowl.

Combine the water and vinegar.
Sift together flour, soda and
salt and blend into the oil mixture alternately with the water. Add the diced
apples and gently blend just until combined.
Spoon into muffin pan and sprinkle
with topping.
Bake 20-30 minutes until golden brown and top springs back when
lightly touched.
