A cold winter rain.......it's five o'clock......I just wanna go home.....soup's on....dreaming of those hot biscuits......jammies are ready! Ahhhhh.....there'd be days like this my mama said!
Potato Cheese Chowder
1/4 lb. butter
1 carrot, diced
1 stalk celery, diced
3 scallions, thinly sliced
4 yukon gold potatoes, peeled and cubed
1/2 cup flour
4 cups of chicken broth
1 can of beer
1 cup Parmesan cheese
1/2 lb. sharp cheddar cheese, grated
1/2 lb. white cheddar cheese, grated
salt and pepper to taste
red and green bell pepper, diced for garnish
1/2 t. dried dill for garnish
3 strips cooked bacon, for garnish
In a heavy stock pot, melt the butter over low heat. Add all of the vegetables and the flour...cook stirring every so often, until tender. Add the broth and the beer and continue to simmer. With a whisk, blend in the cheeses and the seasonings. Simmer over low heat for about 10 minutes. Garnish with peppers, dill and bacon.
