A PERFECTLY PUMPKIN CAKE WITH SPICED BUTTERCREAM




What a delicious looking cake.....
it's actually made with a boxed mix.....shhhhh......
Sometimes, you don't want to start from scratch
when baking, so it's always a good idea to
keep your pantry stocked with boxed mixes
that you can prepare when pressed for time.
Here are a few little tips to dress it up a notch......


I added semi-sweet chocolate chips to the batter......


then.....prepared a homemade buttercream frosting
which was spiced with cinnamon and pumpkin pie spice!

SPICED BUTTERCREAM
1/2 cup butter at room temperature
4 ounces of cream cheese, softened
2 1/2 cups powdered sugar
1/8 t. salt
1/2 t. cinnamon
1/4 t. pumpkin pie spice
1 t. vanilla
1 T. half and half

Blend all ingredients until smooth.
Frosts two layers of cake.


It just may knock your socks off.......
