When you have been a "home chef"
as long as I have, you learn to create some
pretty delicious dinners!
This is the way I prepare Tilapia
which has become one of the darling's favorites!
Who doesn't love recipes that are easy to prepare
with very few ingredients!
TILAPIA OVER SPANISH RICE
3-4 Tilapia Filets or Loins, frozen
Old Bay Seasoning
2-3 Fresh Lemons
Olive Oil
Preheat oven to 285 degrees F.
Place Tilapia filets in baking dish.
Sprinkle with Old Bay Seasoning.
Drizzle lightly with olive oil.
Place fresh lemon slices over fish.
Cover and bake for 30 minutes at 285 degrees.
Adjust baking temperature to 325 degrees F.
for additional 30 minutes.
Serve over Spanish rice.
SPANISH RICE
1 cup regular rice
1/2 t. salt
2 cups water
3 T. butter
1 can Rotel Tomatoes
Add rice to salted water in a medium saucepan.
Add butter and 1 can Rotel tomatoes, undrained.
Cover and allow to simmer for 30 minutes, until rice has absorbed liquid.
Ready to serve when hot and fluffy!
