GREEN PEPPER EGGS...MAKING BREAKFAST BEAUTIFUL


I am always looking for new ideas for breakfast, aren't you?
Often times, we grab a piece of toast or an english muffin
and that is expected to carry us through until the noon hour arrives.

I try to always make a pretty presentation when serving the family
and this little delight was not only easy, but has become a frequent
request for our weekday breakfasts!


One egg
One green pepper slice
Goat Cheese
Mrs. Dash
Mozzarella cheese, grated

Steam the green pepper slice in a small saucepan for about 2-3 minutes.
Crack one egg in the center of the ring.
Add a few teaspoons of goat cheese.
Sprinkle with Mrs. Dash
Allow the egg to set on both sides, about 3 minutes per side.
Sprinkle with grated Mozzarella cheese and allow to melt.
Ready to serve on whole grain toast.

  2. Looks good! And we _can_ get peppers, which are edible, in winter. Unlike edible tomatoes, at this time of year. ,-)

  4. It really does look pretty! Bet you could get a red "ribbon" on it for Christmas time breakfasts, too. I am guilty of not giving much time or thought to breakfast.
