THE RAISIN BRAN MUFFIN.....A TRUE CLASSIC!

“October is crisp days and cool nights,
A time to curl up around the dancing flames
And
Sink into a good book.”

My darling Grandmother Grace always had muffins baking.
This was her recipe for the classic Raisin Bran muffin,
which I make often. In my humble opinion,
there is no substitute for her recipe.
These make the perfect after school snack
for the little ones and for those of us that are
"young at heart".....well we adore them
with that afternoon cup of coffee!
What a wonderful way to celebrate our favorite autumn month!

2 tablespoons SUGAR
1 teaspoon CINNAMON
1 14 cups FLOUR
12 cup SUGAR
12 teaspoon SALT
1 tablespoon BAKING POWDER
3 cups Raisin Bran cereal
1 14 cups MILK
1 EGG
14 cup vegetable oil

Preheat oven to 350°F.
In a small bowl, combine 1 tbsp sugar and cinnamon. Set aside.
In a medium bowl, stir together flour, 1/2 cup sugar, salt and baking powder. Set aside.
In a large mixing bowl, combine cereal and milk. Let stand about 2 minutes or until cereal is softened. Add egg and oil. Beat well.
Add flour mixture to cereal mixture and stir just until combined. Scoop into lined muffin cups. Sprinkle evenly with topping.
Bake approximately 25 minutes. We love these served warm and slathered with creamy buttah!

  1. Those sound wonderful. The best part is that I bet you think of your grandmother every time you bake them. I have a pie dish that belonged to my gramma and everytime I use it I remember her bringing pies to our house for the holidays in that pie dish. xo Diana
