CHRISTMAS CHOCOLATE SNACK CAKE! HOLIDAY ADVENTURES IN ATLANTA!



Are you looking for a quick and delicious treat for Christmas Eve or Christmas Day? 
This is one of my all time favorite recipes which
 will always produce a fabulous, moist snack cake, which is
perfect to serve for unexpected company or the children's little house party! 
I love that it 's only an 8-inch cake and perfect for two people, 
if you prefer not to bake an 11" x 13" cake! 
It would be a great little after school delight for the kiddos 
with a big glass of milk served in a Santa mug!

I finally received a few pictures of their Thanksgiving.....since their trip to Dallas had been cancelled due to Luke's emergency surgery in October, they were invited to join very close friends for Thanksgiving day. Luke is well loved by Little Izzy, her sweet cousin, Avery Ann and now Izzy's baby sister, Felicity! Are they precious or what? 


Luke has asked for a Nutcracker this season? 
Where in the world he got that idea is beyond us all!
Anyway, Miss M picked this guy up at Kroger for $6.00. 



Snowy has been a busy elf! 
He decided to organize all "the babies" for a welcome home from school, one day!
 Love the reindeer antlers George! 
That was a gift from Maine Grandma a few years ago! 



Snowy selected a new collection of books for his library with a snowman theme!
 How FUN!
A new night light that projects a snowman on the ceiling
 was also a gift for his bedroom.
 Hey....I think I want one of those! Or do I?
 Maybe the darling wouldn't be too comfortable
 with a huge snowman face looking down on us????

Now...onto the Chocolate Snack cake recipe.......
Only a few more days until Christmas, so enjoy the season y'all! 



CHRISTMAS CHOCOLATE SNACK CAKE
 1 3/4 cups flour
1 cup brown sugar, packed
1/4 cup baking cocoa
½ t cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
 1 cup milk
1/3 cup vegetable oil
1 large egg
1 teaspoon vinegar
1 teaspoon vanilla
1/3-1/2 cup milk chocolate chips
 1/3 cup pecans, chopped


Set oven to 350 degrees F. Grease an 8 x 8-inch square baking pan.
In a bowl mix together the first 6 dry ingredients.
In another bowl whisk the water or milk with oil, egg, vinegar and vanilla; add to the dry ingredients and mix until combined.
Pour cake batter into prepared baking pan.
Sprinkle chocolate chips and finely chopped pecans over batter, swirl with a knife to mix into batter.
Bake 30-35 minutes. Serve warm with freshly whipped cream or vanilla ice cream!

      Your blog is always fresh and lovely and full of beautiful photos and interesting recipes and tid bits and etc. Did I say it is always lovely? Yes, I did. -sigh-

      And I just do not understand why so few comment here!

      I certainly hope, that you have a thing like SiteCounter, which shows the number of people who actually read our blogs. I am sure, that you have zillions of people, reading and enjoying here. But so few take the time to comment.

    3. Oh dear Tessa! Thank you so very, very much! It's one of those sleepless nights, so I am responding at 3:00 in the AM! How crazy! Too much to think about I suppose. I do appreciate those that read or find a delightful post! Each day, there is something interesting to write about or a lovely bit of inspiration. If anyone finds enjoyment, then perhaps that is the purpose of Estelle's! The lovely part of Estelle's is finding beautiful friends like you. Not many perhaps, just treasured nonetheless!
